University
of Derby – School of Tourism and Hospitality Management
In 2005 the University of
Derby opened the doors to this stunning new £20m Campus in
Buxton. Set in the Peak District, the campus is an
architectural jewel and by working in close consultation with
English Heritage over the past four years, the University's
careful restoration work has saved this Grade II listed
landmark. The 10th February 2006 saw the official opening
of the Devonshire Campus by HRH The Prince of Wales. The
Prince and Duchess toured the campus meeting staff and students
and even joined in a cookery class in the state-of-the-art
lecture theatre.
Grants
from the Savoy Educational Trust were used specifically to fund
the seven industry standard kitchens including the training and
competition kitchen, the Bistro kitchen and the international
kitchen featuring a large wok hob and a balti oven. The
refurbishment and redevelopment of this area of the Devonshire
has made it possible for catering and hospitality students at
the University of Derby Buxton to use facilities usually only
found in the very best restaurants.

The Bournemouth Hotel School
– the proposed new 4-star teaching hotel in Bournemouth,
formally launched in the early part of 2005, and which the Trust
has supported since its conception in January 1999, is planning
to open its doors to students in 2010. The Trustees were
delighted to learn that the Bournemouth Hotel School project has
played a major role in the People 1st business plan for a
National Skills Academy. "I am confident that this
novel and innovative approach to teaching and skills development
will make a major contribution to the skills base of the hotel
industry in the South West of England and will have a national
and international impact as well". Board Member

CARDINAL
WISEMAN SCHOOL
- With
funding set aside by the School and successful grant
applications to various charitable foundations, including the
Savoy Educational Trust, Cardinal Wiseman School in West London
were able to open a stunning new facility at the School in the
form of an industry-standard training and production kitchen
known as "the David Foskett Training Kitchen". The
facility was officially opened on the 30th March 2007.

NEW COLLEGE
NOTTINGHAM
- With
funding obtained through their Centre of Vocational Excellence
accreditation and from the Savoy Educational Trust the College
has undergone a programme of developing top class facilities and
resources which would promote excellence and best practice in
the delivery of the catering skills elements of their NVQ
programme. Recent funding from the Trust enabled the
College to purchase video/CD filming and recording equipment to
record the Masterclass demonstrations taking place in the 'Savoy
Educational Trust Demonstration Theatre'. The new
state-of-the-art facilities were unveiled at a special launch
event in November 2006.

SOUTH DEVON
COLLEGE -
The
College provides a curriculum that trains students in both food
preparation and food service so that they are multi skilled and
have a broader understanding of industry needs. Horizons,
their 90 cover licensed training restaurant is a high quality
learning environment and has benefited from refurbishment and
the replacement of some food service items. Budgets
constraints did not allow for operational IT based equipment to
ensure they reflect industry standards in this area. The
College successfully engaged the support of the Trust in helping
them to purchase an electronic point of sale system for the
restaurant, a front office reservations and billing software
package, together with internet based stock control system for
the main food and beverage stores that would support student
learning in menu planning and cost. Commenting on the
outcomes and impact to date following the implementation of the
grant, Section of of Hospitality and Catering Services, states
"In twelve months we have made great progress and there is no
doubt that the practical operation of Horizons and individual
student learning has benefited enormously from the Savoy
Educational grant that has enabled us to provide a more
efficient and professional learning environment. We thank
the Trustees for their support."

South Devon College
JUNIOR CHEFS'
ACADEMY -
The Trust
recently awarded a grant to the Compass Group Foundation for
their Junior Chefs' Academy. This is a unique and far
reaching initiative which is supported by schools, colleges
education and industry and endorsed by City & Guilds and other
leading industry bodies including the Sector Skills Council,
People 1st, who have embraced the scheme as a model programme
for 14-19 year old training provision. . Since the
scheme was established in 2003 Compass report that 1,200
students have graduated with 15 colleges now operating an
Academy. Groups of 14-16 year olds from local schools
attend College on a Saturday morning for 15 weeks to learn basic
cookery, hygiene and health and safety culminating in a
graduation ceremony where students prepare and cook for family
and friends. The Junior Chefs' Academy has won 5 awards in
recognition of its CSR and industry benefits including the
'Corporate Community Investment Innovation' award from the
Charities Aid Foundation.

COMPETITIONS/AWARDS
YOUNG CHEF YOUNG WAITER
2007 - WINNERS ANNOUNCED
Simon Christey-French, aged
24 from The Connaught in London won the title of Young Chef
and Matthew Mawtus, aged 22 of Gordon Ramsay at Claridge's
the title of
Young Waiter in the 2007 Young Chef Young Waiter Competition
held on the 15th October 2007 at Westminster Kingsway College.
The competition
is organised by The Restaurant Association with the support of
the Savoy Educational Trust and American Express and attracts
hundreds of entries from all over the UK. The 16 finalists were
selected from regional heats which took place in Fife,
Darlington, Birmingham
and London in September, and as part of their prize they were all
taken to France by Champagne Louis Roederer and given the unique
opportunity of visiting the company's private estate and cellars
in Reims.

have each won £2,000, plus a week's study trip to Berlin. The awards were announced at a dinner on the
evening of the 15th October 2007 at the InterContinental London
Park Lane.
THE ANNUAL
AWARDS OF EXCELLENCE
The three top
scorers in the 2007 Annual Awards of Excellence run by the
Academy of Culinary Arts were chef Joshua Duncan from the
Commonwealth Club, pastry chef Will Torrent from Richings Park
Golf Club and waiter Christopher Peck from Gleneagles.
Their main prize, courtesy of the Savoy Educational Trust, is a
travel scholarship. The trio, along with 19 other
young professionals, gained their award of excellence at a gala
dinner held in July at Claridge's.
ROUX
SCHOLARSHIP 2008
The winner of the
2008 Roux Scholarship was Daniel Cox of Compass Group currently
based at UBS in London. Daniel won the
opportunity to spend 3 months at a 3-Michelin-starred restaurant
of his choice, as well as a
cash prize of £5,000 from
the Savoy Educational Trust to be used to further his career.
